They grow a broad selection of vegetables and fruits in order to mimic this naturally occurring diversity. Crop rotation is a key component. Pests have a hard time finding crops when their location is moved each year!

Their livestock participate in this rotation as well: plants provide nutrients to the livestock, and in return, healthy, natural fertilizer is added to the soil. CSA produce, eggs and poultry.

Austerfield honey is gathered from the Dundalk Highlands, with an elevation of 1700 ft. making it the highest point in Ontario above sea level. Due to the growing season being only three months in length this area is not intensely farmed, thus there is very low use of chemical spray or fertilizer.

They raise grass fed beef and lamb, heritage pork, pastured poultry & grow legumes and small grains.

Connie’s Kitchen include Italian dishes, bread and cookies, including biscotti in a variety of flavours, as well as jams, jellies, soups, farm fresh vegetables and canned goods.

They farm approximately 15 varieties of specialty mushrooms year round adding nothing to the grow blocks but a little water and love. The spent mushroom compost is then turned into the garden where they produce 5 acres of fruits and vegetables including (but not limited to) summer and winter squashes, pumpkins, garlic, tomatoes, potatoes, beets, corn, watermelons and some fresh herbs.

They follow organic farm management practices and are starting to incorporate regenerative agriculture methods into their farming. Food is only as good as the soil it grows in.

All of those flowers keep their buzzing bees busy pollinating and making delicious, all natural wild flower honey and fresh honeycomb.
